SCALLOPED CORN

Richmond, Indiana - This is one of those easy side dishes that only takes a few minutes to prepare and it goes alone with so many main courses. If you want to do a little something special with dinner one evening this side puts a little twist on your vegetable.

SCALLOPED CORN

¼ cup finely chopped onion

¼ cup green or red chopped sweet pepper

2 tablespoons butter

1 beaten egg

½ cup milk

¾ cup coarsely crushed Ritz crackers

1 can whole corn (I used Del Monte)

1 can cream corn

Cook onion and green pepper in 1 tablespoon of the butter till tender. Combine your egg and milk and 1/3 of the crumbled crackers, I added a dash or two of pepper. Add the onion mixture and corn. Pour into a 1-quart casserole sprayed wit Pam. Add the remaining butter to the remaining crackers and put on top of corn mixture. Bake at 350* for 35 minutes. Enjoy
