Richmond, Indiana - Spring just around the corner I have the two big “Gs” on my mind, grilling and gardening. I use our grill pretty much all year; however with the 8-10 inches of snow on the ground I think I will use my indoor grill this time. With all this bad weather it is hard to believe that spring is only two weeks away! I think most of us in this part of the country are ready to get outside and enjoy some warm weather. This wonderful recipe will definitely make you think of spring and using that outdoor grill. Sandwich pound cake slices with your favorite flavored cream cheese and toasted for a little taste of heaven. I didn’t think that pound cake could get any better… well it just did. Enjoy!


CREAM FILLED GRILLED POUND CAKE

4 Tablespoons cream cheese (I use either strawberry or pineapple)

8 (1/2 inch sliced pound cake)

Whipped Cream

Fresh strawberries or blueberries

Spread your cream cheese on 4 slices of pound cake and place the other 4 slices of pound cake on top to make a sandwich. Grill, covered over medium heat about 2 minutes on each side and top with whipped topping and berries. Serve at once. Enjoy!
