Richmond, Indiana - Trying to watch our diets it seems we eat a lot of white meat these days, especially chicken. I mean… how many ways can a cook prepare chicken? Well I came across this recipe and I had to give it a try. I think you will like it also; the intensely flavored marinate, bright with lime juice, and zesty with garlic, soy sauce deeply seasons the meat, and the grill gives it a beautiful sear, what a great presentation! And the chicken was so moist. This Latin American flavor is awesome! And it only took me 5 minutes to prepare marinate. ENJOY!



Peruvian Chicken

1/3 cup soy sauce

2 tablespoons fresh lime juice

5 cloves of garlic

2 teaspoons ground cumin

1 teaspoon paprika

½ teaspoon dried oregano

1 tablespoon vegetable oil

8 boneless skinless chicken breast portions.



Blend first 7 ingredients together in the blender. Place chicken and marinate in a large zip lock bag and marinate for 8 to 24 hours in refrigerator. Grill till done!

(NOTE: You can use a whole chicken or chicken quarters if you like.)
