BAKED OATMEAL

Fred and I just returned from visiting our cousin’s home in Tennessee . We had a great time, the drive is always beautiful going through the mountains. We did a lot of sight seeing, and visiting our relatives that we hadn’t seen in a while. It is always a lot of fun to catch up on everything going on in everyone’s life. One thing for sure we always have a great visit and a lot of good food!

Andy, our cousin’s son-in-law, is a great chef. I am always excited when we go there and they say, Andy’s cooking tonight because I know it is going to be a real treat! His wife Carlie makes you feel right at home. I don’t think either one of them knows a stranger. It has sure been a pleasure to get to know them over the last few years; they are just good God filled people. Andy was gracious to share one of his recipes with us this week. If you are looking for a good breakfast dish that feeds a lot of people, well this is it! This recipe is absolutely delicious and super easy! I tasted this one and it is something to wake up for in the morning. It is delicious! Enjoy!!!



BAKED OATMEAL



½ cup vegetable oil

2 eggs

1 cup sugar

3 cups oatmeal

2 teaspoons baking powder

1 teaspoon salt

1 cup milk

1 cup walnuts chopped

Enough diced apples to cover the dish about 2 cups

Add a little extra oil if it seems to dry

(Andy’s secret ingredient…1 package instant apple oatmeal added to your regular oatmeal)

Beat eggs in separate bowl, add oil and sugar, and mix well. Add oatmeal, baking powder, salt, and milk. Mix well.

Put in a large baking dish and
