HOMEMADE BANANA CAKE

Richmond, Indiana - We went to church and to visit some dear friends of ours last Sunday and what a wonderful time we had. It was a wonderful service at church. After church we went to their home for a lovely dinner and great fellowship. It was so good to talk and get caught up on all of our family members and what’s going on with our children and grandchildren. We first became friends when our children were in grade school and have been friends now somewhere around 29 years.

As time goes on and our lives change sometimes we may not get to see or talk to each other for months at a time but you know we just pick right up where we left off. There is just nothing better then a good Christian friend. Karen served us a GOOD cake. She said Mary Richards gave it to her and that I could share it.


¾ cups shortening

¾ cups soured milk (or 1T vinegar in ¾ cup sweet milk, this is what I use.)

2 ½ cups flour

1 teaspoon salt

1 teaspoon vanilla

1 teaspoon soda

1 ½ cups sugar

1 cup mashed ripe bananas

1 teaspoon baking powder

3 eggs

3 teaspoon water

Mix all ingredients together and place in greased and floured baking dish. Bake about 45 to 55 minutes or until toothpick comes out clean.

THE VERY BEST THING ABOUT THIS CAKE IS YOU CAN MAKE IT AHEAD OF TIME AND FREEZE IT. THIS CAKE FREEZES EXTREMELY WELL AND SEEMS TO BE MOISTER AFTER IT IS FROZEN! ENJOY
